I had surplus Green papayas on hand about 15 as the papaya plant suffered water logging and roots started to suffer and all the leaves dried away. I gave away 8 of them n still 7 was left of which few were ripening the green ones I made into papaya murabba and Papaya pickle. Both turned out fabulous I did not note down pickle salt masala quantity so next time when I prepare will note down n share the same...
Papaya Murabba
1 cup Raw Papaya Cubed
3/4th cup jaggery powdered
1/4tsp Cinnamon powder
1/4tsp Caradmom powder
Peel the Papaya pieces and wash thoroughly to remove its milk place on a colander to let the water drip away then spread on clean cotton clothe to let any excess moisture dry away it may take an hour or so depending on weather...
Mix together papaya pieces and jaggery and keep them overnight so that papaya pieces leave water as jaggery gets dissolved next day ... boil this till jaggery forms sticky syrup consistence then add cinnamon and cardamom powder let it cool once cool store in glass bottle and enjoy...
