Menthe Chutney - Methi Chutney

Today I was lazily browsing net for some inspiring recipes to make... What better way to while away time other than looking something yum yum... I typed in monsoon recipes on google it took me to this one wonderful blog called monsoon spice recipe Ponmmogranate tambli arrg I had heard many times about goodness of pomogranate and how it keeps us healthy but never made my mind to try the tambli and this blog has made me resolve to try it once I get hold of pomogranate peels..... So while going thru the blog I spotted another healthy chutnet Menthe chutney my eyes got glued and wanted to tryit as I had all ingredients at home.... God it is yummy I wanted to share with you all ....

I made few changes to original recipe to suit our taste....

Here is my version

Ingredients:
      Fenugreek Seeds (Menthe Kaalu) - 1/2 tsp 

      Grated Fresh Coconut                   - 1/2 cup

       Dry Red Chillies                           - 6-7
      
       Jaggery                                          - 1/2 tsp
   
        Salt to taste
      
 For Tempering :
       Oil                                              - 1/2tsp 
        
       Mustard Seeds                           - 1/2 tsp

      
Hing/Asafoetida                        - apinch

       Curry Leaves few
               

 Method:

         Dry roast Methi seeds and broken red chillies till nice aroma wafts cool it and grind add  coconut and grind again if needed added water in small quaties till the mixture is smooth...
         Heal oil and temper when mustard seeds stops popping add the ground paste add about 1/4 cup water , jaggeryand  salt, boil stirring in between till the mixture thickens... Once thick its ready to serve with rice....

Note:

The coconut I used was sweet so I used 1/2 tsp you need to adjust accordingly...
I added more chillies than the original recipe called for....
