Carrot Cauliflower Pickle....

I love carrot pickles ... But my hubby likes to eat them raw as a result I was left with few carrots only I thought of pickling them then http://www.vahrehvah.com/indianfood/carrot-cauliflower-pickle/ blog created interest in me to try their carrot cauliflower pickle so I tried it out with minor modifications...

Ingredients

Cauliflower florets –      1 cup

Carrot peeled n cubed – 1  cup
 
Garlic –  9 to 10
 
Lemon  – 2  small
 
fenugreek  –1/4 tsp
 
Mustard seeds  –  a bit less than 1/4  cup
 
 Red Chilli powder – 1/2  cup
 
 Tumeric Powder – 1 tsp
 
 Salt  – 1 1/2 tbsp or as per your taste
 
Tempering : 
 
Mustard Seeds – 1/2  tsp
 
Gingelly oil – 1/2  cup
 
Red Chilli  –  3

Cumin Seed –  1/2  tsp
 
Curry Leaves – 1 sprig

Instructions

 Slice the carrots  into small cubes and cauliflower into small florets and keep it aside.

 In a  mixie jar  add red chilli powder,mustard ,fenugreek ,5 to 6 garlic ,turmeric powder and finely powder them  and keep it a side. 

In a pan heat oil add te,pering ingredients when mustard stops popping  switch off the flame and add curry leaves keep this aside till it is cool .

Now take spices mixture in a bowl and add tempering to it and mix it well, now add cut Carrot and califlower cubes into it and mix it well at last add lemon juice. Keep it aside for a day....

 

       Yummy pickle is ready
